Choose a cocoa-mix or melted-chocolate recipe, scale portions, mix smoothly and plan serving temperatures and prompt cooling for leftovers.

Workflow

  1. Choose a cocoa mix or chocolate recipe

    Use a complete recipe for your chosen drink. The linked King Arthur recipe makes a dry cocoa mix to combine with hot milk. A melted-chocolate drink has a different formulation.

  2. Measure, mix and heat

    Sift and blend dry ingredients as the recipe directs. Measure the correct amount per serving, add the specified milk and stir while heating in a suitable saucepan. Use a thermometer when monitoring the drink; a tempering lookup cannot read milk temperature.

  3. Serve in manageable batches

    Check drink temperature before serving, especially to children. If holding for a group, use equipment that maintains the required hot-holding conditions and verify the temperature; an insulated flask alone does not establish a safe holding time.

  4. Cool leftovers promptly

    Transfer leftovers to shallow containers for prompt refrigeration. For home handling, USDA calls for refrigeration within two hours, or one hour above 90°F ambient temperature. Store the dry mix separately according to its ingredients and recipe.
