Read the thermometer immersion depth, response time and accuracy instructions. Perform the maker-recommended check; ThermoWorks describes a properly prepared ice bath. An ice-point check alone does not establish accuracy across all brewing temperatures.
Water does not boil at 100°C everywhere; altitude and air pressure affect the boiling point. If your local water boils below a recipe target, record the attainable temperature and seek a suitable recipe adjustment rather than heating indefinitely.
Use the same water volume and vessel for each trial. Take readings at defined times after pouring while keeping the sensor away from vessel walls as its instructions require. Record whether the vessel was warmed.
Brew at the measured starting condition, taste after comfortable cooling and note the result. Repeat with one deliberate change. Save the kettle setting, measured temperature, vessel and timing that produced the result you liked.

Convert absolute temperatures with the offset; convert temperature differences without it. A unit conversion does not predict heat loss.

Repeat the check when you change the kettle, vessel or water volume.
Avoid mixing a mug recipe with short repeated gongfu infusions.
