How it works

Choose the complete meat or poultry process

USDA distinguishes whole raw meat, ground meat and poultry endpoints and calls for separate chamber and food thermometers. Whole raw steaks, chops and roasts have a three-minute rest requirement. A single reading does not prove that all process steps are complete.

Keep the fish process separate

UAF’s hot-smoking method includes a food-temperature hold of at least 30 continuous minutes at or above 160°F. Its chamber treatment is staged, so the tool does not substitute one fixed meat-smoking range. Read the full preparation and cold-storage instructions.

Use the named bacon process

OSU PNW 784 specifies 160°F internally for its home-cured pork-belly process and discusses a 225–250°F cooking setting. That is a specific recipe process, not a general endpoint for every pork product.

Compare an entered temperature window

For a recipe stage or cold-smoking procedure, supply both limits and a reading from the specified thermometer location. The signed margins show the reading’s position relative to those limits. The tool does not judge whether the limits make a valid process.

Work backward from serving time

Subtract the supplied rest, cooking and preparation allowances. Earlier days are shown explicitly. This is a simple 24-hour planning clock with a seven-day horizon; it does not predict doneness, weather effects or daylight-saving changes.

Predicting cooking time from weight alone

Use a recipe or comparable process records for the allowance and thermometers for actual progress.

Using a fish or bacon reference without its full process

Keep the named source’s preparation, hold, cooling and storage requirements together.

Treating “within window” as a safety result

It is only a numerical comparison with entered limits. Cold-smoking conditions and cold storage require a complete food-specific process.

Time also depends on shape, cut, equipment, temperature, weather and the process. A weight-only multiplier cannot establish when food has completed cooking.

No. It displays the UAF requirement but does not record a continuous temperature trace or verify that the hold occurred.

The recipe-window and schedule modes can record values from a complete, appropriate process. The calculator supplies no universal cheese temperature, duration or shelf life.

Times include a day offset relative to the intended serving day. Calendar dates and daylight-saving transitions are outside this planning model.
