Use the ingredients and preparation stage stated by the recipe, such as trimmed vegetables or drained curds. Exclude the added salt from this base.
Apply the food-weight ratio
Multiply the prepared food mass by the recipe percentage divided by 100. An arithmetic example of 2.5% and 1,000 g food gives 25 g salt.

For fermented pickles or sauerkraut, keep the required salt and the full tested process. The arithmetic here does not determine acidity, fermentation time, shelf life or a canning schedule.
