Vegetable Fermentation Guide

Choose a tested vegetable-fermentation recipe, match its salt calculation, prepare equipment and keep batch records with a practical checklist.

Workflow

  1. Choose a tested recipe and identify its method

    Start with a published recipe for the specific vegetable and process, such as NCHFP sauerkraut or fermented dill pickles. Record whether it uses direct salting or added brine, and whether the finished batch will be refrigerated or canned.

  2. Set up the container and observation record

    Prepare the container, covering and weights required by the recipe. Keep a log of actual temperature readings, dates and observations so each batch can be checked against its own instructions.

  3. Apply the recipe’s completion and storage instructions

    Check the recipe’s completion criteria and spoilage guidance, then label and store the batch as directed. For canning, use its full processing instructions for the jar size, packing method and altitude.

Salt ÷ food × 100 describes a recipe ratio. Salt ÷ water × 100 and salt ÷ (salt + water) × 100 describe different salt-and-water ratios. For example, 50 g salt with 1,000 g water is 5% relative to water and about 4.761905% of the combined mass. This example does not select a fermentation salt level.

Keep the tested proportions and container methodStandard

  • Write units on the record

    Keep grams, kilograms, cups and tablespoons explicit. Total salt-and-water mass cannot be relabeled as liters.

  • Make the next batch easier

    Keep one note per batch and download the checklist after preparation. Reuse the note structure while checking the source recipe each time.

  • Separate tools from measurements

    Use a scale and thermometer for physical readings. The linked calculators perform arithmetic on the numbers you enter.
