How it works

Define the starting packet

The model starts with one continuous butter sheet between two dough layers. It describes a complete enclosed lock-in, not rough puff or an inverse-lamination setup.

Count the fold panels

A letter fold stacks three panels and a book fold stacks four. With s letter folds and b book folds, butter layers B = 3^s × 4^b. This is a geometric derivation; the linked recipe illustrates actual enclosed-butter handling, not a universal fold prescription.

Distinguish dough from butter

Touching dough surfaces merge in this ideal model: dough layers = B + 1 and total layers = 2B + 1. At zero folds there are 1 butter, 2 dough and 3 total layers. Two letter folds and one book fold produce 36 butter, 37 dough and 73 total layers.

Apply the model limits

Use non-negative whole fold counts with at most ten folds combined. The count assumes continuous, even layers; it does not model tearing, smearing, rest time, proofing or baked rise. Follow the chosen recipe for the real process.
