Workflow

  1. Prepare a puff-pastry component if needed

    For a laminated project, follow the recipe’s butter lock-in, dimensions, folds and rests. Mark each completed turn on your batch note. The layer calculator illustrates an ideal enclosed butter sheet and distinguishes butter layers from total layers.

  2. Mix and bake a choux component if needed

    For cream puffs or éclairs, cook the flour paste, cool it as directed and incorporate the eggs in the recipe’s order. Portion consistently. Follow all stages of baking and vent the finished shells as the recipe directs.

  3. Prepare and chill the filling

    Use the pastry-cream guide for ingredient scaling, the selected cooking endpoint and prompt refrigeration. Keep component containers labeled so raw dough and ready-to-use filling are easy to distinguish.

  4. Assemble for service and save the component notes

    As needed for the batch

    Fill fully cooled shells with chilled filling close to serving. Test one pastry for fit and texture, then complete the batch. Keep cream-filled pastries cold and record actual component yields for the next bake.

Start with one butter sheet between two dough layers. A letter fold stacks three panels and a book fold stacks four. With s letter folds and b book folds, B = 3^s × 4^b butter layers; merging touching dough surfaces gives B + 1 dough layers. Two letter folds and one book fold give 36 butter, 37 dough and 73 total layers.

Filling and raw-dough handlingStandard

Use the complete pastry-cream recipe and keep egg fillings refrigerated. Handle raw flour and eggs separately from cooked shells and filling, and clean tools before assembly.

    Give each component its own recipe, yield, make time and storage note.

  • Record turns as they happen

    Use a written mark for each fold rather than relying on the dough’s appearance.

  • Repeat one shape first

    A consistent size makes it easier to compare bake and filling results.
