Make Fruit Leather and Check the Center

Record the fruit recipe, spread an even layer, use the leather-specific center test, then wrap and store by the matching instructions.

Workflow

  1. Choose a fruit-leather recipe and record the batch

    Open NCHFP’s Fruit Leathers directions and choose the fresh, frozen or canned-fruit preparation that matches your ingredients. Start a Notepad record with fruit, source URL, ingredient quantities, tray and intended storage. Keep optional additions identifiable.

  2. Prepare the puree and an even layer

    Prepare and puree the fruit according to the selected directions, including any antidarkening treatment. Use a liner suitable for the appliance and spread an even layer about 1/8 inch thick, as NCHFP specifies. Record actual tray coverage and thickness; avoid a thick central pool.

  3. Dry at the source setting and inspect the center

    NCHFP specifies 140°F for fruit leather; convert to Celsius if needed for your equipment. Leather dries from its edges inward. Follow the appliance instructions and record actual checks instead of treating a fixed number of hours as completion.

  4. Use the leather-specific dryness test

    Test the center as described by NCHFP: touching it should leave no indentation. Record the center result for each sheet and continue the selected process if it is not ready. Peel and roll while warm as directed, then allow the roll to cool before rewrapping.

  5. Wrap, label and choose the matching storage

    Label the plain fruit leather with batch date, ingredients and storage location. NCHFP gives up to one month at room temperature or up to one year tightly wrapped in the freezer. Filled leathers have separate refrigeration directions. Record the selected method and download the note.
