Whole-Beef-Strip Jerky: Heat, Dry and Record

Follow a complete whole-beef-strip procedure, measure internal temperature before drying, check the drying endpoint and record storage.

Workflow

  1. Choose the whole-beef-strip method and record it

    Use the linked NCHFP whole-strip procedure with the pre-drying heating step, read alongside USDA FSIS guidance. Start a Notepad record with meat source, batch date, recipe URL, equipment and food thermometer. Keep the complete recipe with your observations.

  2. Trim and slice while maintaining cold handling

    Trim visible fat and cut strips no thicker than 1/4 inch for the selected NCHFP method. Thaw and marinate under refrigeration, use clean utensils and prevent contact between raw meat and finished food. Record thickness and the marinade recipe; do not substitute a guessed curing-salt percentage.

  3. Heat the meat before drying and measure it

    USDA FSIS recommends heating beef to an internal 160°F before dehydrating. Follow the full NCHFP preheating procedure, which brings strips and marinade to a boil for five minutes, and verify internal temperature with a suitable food thermometer. Record method, time and readings before moving the meat to the drying trays.

  4. Dry the heated strips and inspect the endpoint

    After the prescribed heating, drain and arrange strips without touching or overlapping. NCHFP uses a preheated 140°F dehydrator or oven and a test piece that cracks without breaking when bent. Follow the equipment directions, record checks and keep the heating record separate from this texture observation.

  5. Cool, package and record the storage plan

    Cool and package the finished jerky as directed, then label the batch and date. NCHFP recommends refrigeration or freezing for better keeping quality and gives two weeks at room temperature for properly dried jerky in a sealed container. Record the chosen storage conditions and download the batch note.

    Record which stage and food the reading belongs to, so a chamber setting cannot be mistaken for a meat measurement.

  • Check equipment before starting

    Confirm that your thermometer and drying appliance can be used as the selected procedure requires.

Safety Notes

  • Marinating, curing salt, drying time and a low final weight do not replace the pre-drying heating step.
  • If the required process was not completed or the batch spoiled, do not use a texture check or storage calculator to declare it safe.
