Pastry Cream Recipe and Filling Guide

Scale pastry cream from actual ingredient weights and cooked yield, follow its recipe endpoint, chill promptly and plan pastry filling.

Workflow

  1. Choose the recipe and filling target

    15 minutes

    Choose a complete pastry-cream recipe suited to the pastry. Record its ingredients, cooked yield and storage directions. Fill a trial shell to measure the grams needed per pastry; multiply by the planned count.

  2. Weigh and organize the ingredients

    Apply the same scaling factor to each ingredient, including any flavoring outside the calculator’s five fields. Set out the whisk, saucepan, sieve and shallow cooling containers before heating.

  3. Cook to the recipe’s endpoint

    Follow the recipe’s mixing order and cooking endpoint. In the linked King Arthur cornstarch recipe, the mixture must bubble in the center, followed by one further minute of whisking. A spoon-coating test alone does not establish that this recipe is finished.

  4. Cool promptly and record the batch

    At least 4 hours for the linked recipe

    Transfer to shallow containers for prompt refrigeration at 40°F (4.4°C) or below. Cover the surface as directed by the recipe. Label the recipe, preparation date and planned use; allow the filling to chill fully before assessing texture.

  5. Trial-fill, assemble and keep cold

    As needed for the pastry count

    Smooth the chilled cream as directed. Fill one fully cooled pastry, check the portion and texture, then finish the batch. Keep unused filling refrigerated and assemble close to serving.

Use the complete recipe for ingredient amounts, mixing and finishing. The linked starch-thickened filling needs central bubbling and further whisking; it is not a universal temperature rule for every custard.

Cold storage and serviceStandard

Refrigerate cooked egg dishes promptly in shallow containers and use within 3–4 days. Limit unrefrigerated time to two hours, or one hour when the surroundings exceed 90°F (32.2°C); discard food that exceeds those limits.

  • Prepare the cooling space

    Make refrigerator space before cooking a larger batch.

  • Match the filling style

    Choose a recipe designed for piping or slicing instead of adding an unsupported stabilizer amount.

Safety Notes

  • Use clean tools for cooked filling after handling raw eggs. Hot cream can splatter; use a deep saucepan and handle it carefully.
  • Discard perishable filling after more than two hours unrefrigerated, or one hour above 90°F. Chilling it later does not reset that time.
