Choose hot or raw pack
Use the NCHFP snap and Italian bean recipe. Choose tender pods, wash and trim them, and follow the selected hot- or raw-pack preparation; the two methods fill jars differently.
Prepare snap or Italian beans using the NCHFP hot- or raw-pack method, correct pressure-gauge table and complete processing and cooling sequence.

Use the recipe’s liquid for the chosen pack and leave 1-inch headspace. Prepare the jar rims and lids as directed.
Use the recipe’s dial-gauge 11/12/13/14 PSI table or weighted-gauge 10/15 PSI table. Enter your elevation in the pressure lookup only after matching the table to the actual canner.
Vent a steady stream of steam for 10 minutes before pressurizing. Process pints for 20 minutes or quarts for 25 minutes at the selected pressure. If pressure drops below the target, restore it and restart the full timed process. Follow natural depressurization and removal instructions.
Let jars rest undisturbed for 12–24 hours before checking the seals. Record recipe, pack, jar size, elevation, pressure and any restart alongside the batch date.

Both hot and raw packs use 20 minutes for pints and 25 for quarts. Read the full recipe for packing details; the pressure table depends on gauge and elevation.
The source explains venting, pressure-loss restarts, natural cooling and removal. A pressure cooker or water-bath pot is not a substitute for the specified canner.
The 10-minute vent occurs before pressurizing; it is additional to the recipe’s processing time.
