Prepare separate batches from a tested jam recipe, match the specified pectin, follow jar-processing instructions and keep source-linked storage records.

Workflow

  1. Choose a Complete Recipe and the Specified Pectin

    Choose a tested recipe for the fruit and intended storage method. Save its exact fruit preparation, sugar, acid, pectin product, cooking sequence, jar size and altitude instructions before buying ingredients.

  2. Prepare Fruit and Stage Separate Batches

    Measure the prepared fruit as the recipe directs. When matching mass quantities are available, use the batch planner to count complete batches, total the specified ingredients and keep leftover fruit separate.

  3. Follow the Cooking and Jar-Processing Instructions

    Use the recipe’s ingredient order, boil and gel checks. Prepare jars as required, fill to its headspace, and use the stated jar size and processing time adjusted for elevation.

  4. Cool, Check Seals and Record the Storage Method

    Complete the recipe’s cooling and seal checks. Record the recipe, batch date and intended pantry, refrigerator or freezer storage. Follow its instructions after opening and discard the entire contents if mold or other spoilage appears.

NCHFP advises making the recipe at its original batch size. Multiplying ingredient totals helps stage repeated batches; it does not justify one enlarged cook or a new jar yield.

Match Processing and Storage to the ProductStandard

Use the source’s jar size, headspace, altitude process, cooling and storage directions. NCHFP distinguishes cooked canned spreads from refrigerator/freezer products and gives storage guidance for opened jars.

  • Use the recipe’s gel check

    Read the cooking method before starting so ingredients and checks happen in the correct order.

  • Keep leftover fruit separate

    Use it in another suitable recipe or preserve it separately instead of improvising a fraction of the original batch.

Safety Notes

  • Hot jam can splatter; use stable cookware and suitable utensils when stirring and filling.
  • A calculated ingredient total does not validate a canning process. Keep the complete tested recipe and storage instructions.
