Water Bath Canning Guide

Plan a tested water-bath canning recipe: match jar size and altitude, prepare equipment, maintain the complete boiling process, and check cooled jar seals.

Workflow

  1. Choose the food and its tested process

    Open a tested canning recipe for the exact food and preparation. Build a batch card with its source, ingredient amounts, pack style, jar size, required acidification and processing table. A pH reading alone cannot supply that process.

  2. Check altitude, jars and equipment

    Find the elevation of the actual canning location and select the recipe table’s matching row. Convert meters to feet if needed. Prepare the canner, rack, jars and closures according to the recipe and equipment instructions; copy its headspace and jar preparation directions.

  3. Maintain the complete boiling-water process

    Load the prepared jars and establish the water coverage specified by the canner guidance. Start the recipe’s timer after the water reaches a full boil. Maintain boiling for the entire altitude-adjusted process. If boiling stops, restore it and restart the full process time.

  4. Cool, inspect and label the batch

    Use the canner instructions to remove jars upright with a jar lifter. Let them cool undisturbed, then check seals and label each batch with its food, recipe and date. Consult the linked seal guidance promptly if a jar is unsealed.
