Workflow

  1. Choose a tested recipe and its permitted method

    Before buying ingredients

    Choose a current USDA, NCHFP or extension canning recipe for the exact food. Save its full instructions and identify permitted jar sizes, pack style, ingredients, acid additions and processing method before preparing the batch.

  2. Match equipment, elevation and headspace

    Before heating

    Confirm your elevation and the canner type. Inspect the equipment according to its manual; have a dial gauge tested as recommended. Copy the exact recipe’s headspace and processing-table row into your batch note.

  3. Prepare the recipe and fill the jars

    Use the recipe’s quantities, preparation, pack temperature and allowed jar size. Prepare jars and lids as directed, fill to the specified headspace, remove trapped bubbles and clean the rims before applying lids.

  4. Run the complete processing schedule

    Follow the recipe, its elevation table and the canner instructions. For boiling-water canning, maintain the required boil for the entire process. For pressure canning, vent and maintain the specified pressure, then allow natural depressurization.

  5. Cool, check seals and label the batch

    12–24 hours cooling, then storage

    Cool jars upright and undisturbed for 12–24 hours. For two-piece metal lids, remove bands and test seals after cooling. Clean, label and store correctly processed, sealed jars; promptly handle an unsealed jar using the NCHFP guidance.

Low-acid foods need a suitable pressure-canning process. Acid or acidified foods still require the recipe’s complete preparation and processing instructions. Preserve the specified acid additions, jar size and pack style.

Read the process table as a setTable

Select food, method, pack style, jar size and elevation together. There is no universal five-minutes-per-thousand-feet rule. For NCHFP’s table-reading example, hot-packed peach quarts at 2,500 ft use 30 minutes in a boiling-water canner; that example is not a schedule for other foods.

Use the complete NCHFP canner procedure alongside the equipment manual. Pressure canners require venting before pressurization and natural cooling. A boiling-water interruption or loss of required pressure means restarting the full timed process after recovery.

Seals, storage and failuresStandard

Allow 12–24 hours of undisturbed cooling before checking seals. Store properly processed, sealed jars in a cool, dry, dark place; NCHFP gives 50–70°F as a quality range and recommends planning quantities for about a year. Never taste suspect food.   • Write the table row first

    Copy the selected time and pressure before filling jars so you can verify them during processing.

  • Keep batches identifiable

    Use a batch label that points back to the recipe and processing record.

  • Plan the cooling space

    Set out a protected surface where hot jars can stay upright and undisturbed.

Safety Notes

  • A lid seal, a pH reading or a calculator result does not establish that an improvised canning process is safe.
  • Do not taste suspect canned food. Follow the NCHFP handling and disposal instructions, especially for leaking or unsealed suspect low-acid food.
