Fermentation pH Measurement Plan

Prepare a food pH measurement record with instrument checks, sample preparation, temperature notes and primary sources tied to the recipe’s process.

Workflow

  1. Identify the measurement the process requires

    Keep the selected recipe and its monitoring instructions beside the batch record. Identify what is being sampled, when measurements are required, the specified limit and the action for an unexpected reading.

  2. Prepare and check the physical pH meter

    Use a meter and electrode suitable for the food sample. Follow the instrument’s calibration instructions with appropriate fresh buffers, verify its response and record the check before taking food readings.

  3. Prepare the specified sample and record readings

    Follow the process’s sampling procedure, including preparation of solids and liquids and the required sample temperature. Record the sample identity, time, temperature and stable meter reading. A temperature converter can translate units; it cannot correct or calculate food pH.

  4. Review the record against the complete process

    Compare observations and readings with the selected recipe’s requirements. Record any failed calibration, uncertain sample or unexpected value and seek the appropriate process guidance before making a storage decision.

  • Name the sample

    Label readings as brine, blended food or another specified sample so they remain understandable later.

  • Keep original readings

    If you repeat a measurement, add the new result and reason beside the original instead of silently replacing it.
